Wynn’s Chef Carlos Guia is Cookin’ with Jazz

Between the easy jazz wafting through the dining room, the panoramic view of the Wynn golf course, and the superbly southern food of Chef Carlos Guia, we were captivated by the new “Big Easy” style brunch at Wynn Las Vegas’ The Country Club restaurant. This is one country club you don’t have to be a member of to access a good time.

After selecting from a complimentary Bloody Mary, Champagne or Kentucky Tea, guests can choose from buffet style dining or order off the menu or even do a bit of each. The buffet offers a great selection of grilled meats including chicken sausage, pork chops, beef tenderloin, chile-rubbed turkey, and Creole spice-rubbed jumbo shrimp. The seafood choices are Red King crab legs, shrimp cocktail, oysters, and three types of ceviche as well as a smoked salmon carving station. Other buffet stations include a Salumi display, grilled veggie platter, and both Sweet Corn Chowder and New Orleans Shrimp & Andouille Gumbo.

The menu items in the offing for this brunching event run the gamut — and it is an event. You can choose a decadent French Toast Bread Pudding with Vermont maple syrup, berries, candied pecans, and Applewood smoked bacon. For those seeking some southern comfort, Chef Guia has Shrimp and Grits with sautéed jumbo shrimp smothered in gravy over stone ground Anson Mills grits. And if you can’t start your day without eggs, you can choose between the Omelet of the Day, Eggs Versailles which is poached eggs, smoked salmon on a brioche topped with American caviar and hollandaise, or Poached Eggs with Barbeque Smoked Pork served with bacon cheese muffins and charred green chile hollandaise sauce.

Chef Guia did not forget the little ones. There’s a child’s buffet with cookies, tarts and mac n’ cheese as well as a Grilled Beef Hot Dog that resides on the menu. And finally what would a meal be without dessert? Although we doubt you will have room, there is a dessert/pastry bar with offerings from Executive Pastry Chef Frédéric Robert.
