If the seasonally inspired cocktails from MRKT Sea & Land featured in our December Vices2 (see pages 82-83 of our digital edition) sparked festive visions for upcoming celebrations, we have even more holiday entertaining help from Chef Chad Tretiak of Aliante Station’s MRKT. In addition to recipes for side dishes, we have video of the chef preparing a sumptuous rib-eye for your holiday dinner and step-by-step instructions from mixologist Abigail Fletcher on how to make your party a smash with a sizzling S’mores-tini.

PAN-SEARED RIB EYE BY CHEF TRETIAK
Side Dishes
CREAMED CORN – YIELD 2 SERVINGS

1 Tbsp. diced Poblano pepper

8 oz. frozen white whole kernel corn

1-½ cups heavy cream

1/8 tsp. white pepper

1/8 tsp. kosher salt

1 pinch cayenne pepper

1 Tbsp. unsalted butter

Preparation:

Place butter into a sauté pan, add diced peppers. Sauté the peppers for approx 30 seconds, until sweated. Add whole corn, cream and seasonings. Bring to a simmer for approx 4-5 min, or until cream is reduced and mixture is thickened to a creamy consistency. Serve

SPINACH AND CHEESE TOPPED BAKED TOMATO – YIELD 3 SERVINGS

1 whole ripe beefsteak tomato

3 slices cheddar cheese

1 tbsp. unsalted butter

6 oz. fresh spinach

½ cup cream

¼ cup parmesan cheese

1/8 tsp. white pepper

1/8 tsp. kosher salt

Preparation:

Place the butter in a hot sauté pan and add the spinach. When the spinach is wilted, add the heavy cream and cheese to the spinach. And reduce down to where it is almost dry, season with salt and peppers and remove from heat, and reserve. Cut tomato into thirds, lengthwise. Place tomato slices in a hot sauté pan. And place the spinach mix on top of the tomatoes, then place one slice of cheddar cheese on top of the spinach mix. Place in a broiler for approx 5-6 min and the cheese is melted and starts to turn brown. Serve ASAP.
