New & Notable: A cut above

Hisato Hamada, chef and co-founder of Tokyo-based Wagyumafia, which has become a social-media sensation for its ultra-exclusive beef and members-only restaurants, will host an all-wagyu, special dinner featuring the fat-marbled, incredibly tender meat May 10 and 11 at L’Atelier Joel Robuchon at MGM Grand.

Multiple courses of single-origin Ozaki Beef from Miyazaki Prefecture in Japan will be on the menu. Hamada himself will carve, prepare and serve the dishes in the restaurant’s open kitchen. The tasting menu includes such dishes as The Original Chateaubriand Cutlet Sandwich, known by American cognoscenti as the $180 sando.
